Surprisingly good




chicken broth made from a slow-cooked chicken.


Made without adding any water or stock. I had some for lunch on Monday, having cooked the chicken on Sunday.






Recipe
Ingredients:
One medium chicken (enough to serve 4) (remove skin)
garlic (peeled, sliced)
4 carrots (peeled and sliced)
1 large desert apple (washed and cut into 1/4s)
Method
Place ingredients in large slow cooker.
Cook on high for 4-5 hours or 8 hours on low.

Remove chicken from crock pot and carve  into 4 portions; 2 breasts, 2 leg/thighs.

Drain liquid in crockpot through a strainer into a large heat resistant jug. Add carrots and small pieces of chicken meat from seive and discard remaining bones and any skin. Reheat in the microwave for about 3mins on reheat setting.

The result - a sweet (the apple) flavoursome chicken broth, enough for a starter for 2 or a light lunch served with salad and freshly-baked bread.
