Beautiful Soup

I decided to use the marrow I'd been given to make soup. I've never cooked marrow before so searched my 'Make it Fast, Cook it Slow' book for a recipe. The closest I came up with was a Butternut Squash soup. I added a couple of ripe apricots to the recipe in lieu of the second apple and hoped it wouldn't make too much difference. Despite the fact that I didn't use enough olive oil when roasting the marrow, and undercooked it in the oven, it was quite easy to chop into chunks to add to the crock pot.




Cooked on high for about five hours, it made a quite sophisticated, sweet soup.

Served with fresh home-made spelt bread, and the last of the summer pudding to follow. It was a good Bank-Holiday Monday lunch.
